I’m Paula Rhodes, and I was raised an Indiana farm girl who grew up constantly hearing my father say, “Make it snappy.” Even though I married a Texan and now live in the Dallas-Ft Worth metroplex, I still hear that voice in my ear. My husband calls me Paula “E.” The “E” stands for efficient. If there is a faster, better, and perhaps cheaper way to do something and it still tastes great, I’m all over it.
My obsession with small kitchen appliances started early in my career as a home economist. I taught microwave cooking schools and demonstrated Cuisinart food processors when they were just coming onto the market. I also love bread machines, vacuum-pack machines, blenders, slow cookers, and pressure cookers. I’ve been playing with these modern gadgets for years and long ago got over using them in traditional ways. Vacuum-packing romaine lettuce is a good example.
About 11 years ago, the idea came into my head to vacuum-pack washed and cut lettuce so it would stay fresh with no brown edges for up to 10 days. It turned out to be a lunch I could grab as fast as a bag of chips making it much easier to keep my weight within reason. It worked so well for me, I started a blog in 2009 to share this money/time/calorie-saving technique, along with other kitchen secrets I’ve learned along the way. Among other things, I have 5 grandkids (all live locally, thank you Lord!) who keep me hoppin’.
