Almond Salmon

I LOVE salmon. It’s my favorite kind of grocery store fish (as opposed to exotic fish you can only get at a restaurant). Costco is my main supplier because it comes frozen in individual packets.  Always fresh out of the freezer whenever I need it.  I also love almonds.  Put the two together and you have a quick , easy, healthy meal.

Almond Salmon
Recipe type: Entree
Serves: 2
Salmon with toasted almonds on top
  • 2 individual portions salmon (Nutritionals based on 3 ounce servings)
  • ¼ cup sliced almonds
  • 1 tablespoon butter
  • salt and pepper
  1. Melt butter in saute pan. Very lightly brown almonds and set to the side.
  2. Dry salmon and season with salt and pepper. Brown on both sides.
  3. Pile the almonds on top of salmon in the skillet. Place skillet into oven preheated to 400 degrees for 10-15 minutes (depending on thickness) until done all the way through.

I don’t know if you love salmon as much as I do – will have to share with you a recipe I got off the FoodNetwork from Emeril – we have had it for our Christmas dinner the last 2 years – love your blog – beth

It does look good however, would have to say that salmon is not my favorite fish. Have tried eating it more though. Think I would try it with Mahi Mahi. Calories would be lower!
