I LOVE salmon. It’s my favorite kind of grocery store fish (as opposed to exotic fish you can only get at a restaurant). Costco is my main supplier because it comes frozen in individual packets. Always fresh out of the freezer whenever I need it. I also love almonds. Put the two together and you have a quick , easy, healthy meal.
- 2 individual portions salmon (Nutritionals based on 3 ounce servings)
- ¼ cup sliced almonds
- 1 tablespoon butter
- salt and pepper
- Melt butter in saute pan. Very lightly brown almonds and set to the side.
- Dry salmon and season with salt and pepper. Brown on both sides.
- Pile the almonds on top of salmon in the skillet. Place skillet into oven preheated to 400 degrees for 10-15 minutes (depending on thickness) until done all the way through.
