Camper’s Special


For comfort food that’s easy and quick to prepare, try this layered skillet meal.  I think  this recipe came from Joan Hastings on one of our earliest camping trips.  It is good prepared in a Dutch oven over a campfire, an electric skillet inside the the camper or these days, on top of our stove in my air-conditioned house.


Camper's Special
Recipe type: Entree
Serves: 4
  • Bacon (enough to cover the bottom of your skillet)
  • 1 pound ground beef
  • 3-4 medium potatoes (peeled or not), sliced
  • 5-6 carrots, thinly sliced
  • Salt and pepper
  1. Cover the bottom of your skillet with a layer of bacon
  2. Distribute ground beef over raw bacon.
  3. Layer potatoes on top of beef.
  4. Spread carrots over potatoes.
  5. Season with salt and pepper.
  6. Cover and cook over medium heat until vegetables are tender and bacon is crisp.
You really must serve with catsup. :-)

I have been doing this for as long as I can remember…but in a tin foil pouch thrown right on the hot coals of the campfire. I also like to add onions.

As a solo camper, I will be trying this one on a much smaller scale this spring or as soon as I can pitch my tent. Yes, I am a die hard.But as always I will try it at home first. Nothing worse than having something you truly dislike when there is no other option. I think onion might be good too.
