Tuesdays with Dorie: Burnt Sugar Ice Cream
Time to break out my favorite ice cream maker. I love my Donvier hand crank machine because I can make ice cream on the way to the party if I need to. NO electricity, ice or salt required. It’s also small so my family can eat a whole batch at one sitting. Usually, there is no leftover ice cream to call my name.
Although I can freeze ice cream in the car, it’s a good thing I didn’t wait until the last minute to mix up this ice cream. It’s a custard mixture that needs to be cooked ahead and then chilled. I had fun caramelizing the sugar and cooking the custard in the microwave. Please don’t judge me. I have an abnormal fear of scorched milk and the nasty cleaning job that goes with it.
As for the ice cream itself, IT’S RICH. We had to pair it with something else to tone it down. I tried a small amount (object seen in picture appears larger than it did on my plate) with my homemade cinnamon and brown sugar oatmeal pop tarts. (Click here to see that recipe)

I love your ice cream photos-perfect scoops. I had a hand crank Donvier for years and loved it. Somehow it got lost in a move and I wish I had it back.

It never occurred to me that I could make ice cream on the run with my little Donvier! You may have just changed my world. Too funny. Your ice cream and pop tarts look fantastic.

How’d you do it in the microwave. maybe I should try that after my sugar misadventures.
Margaret, In reply to your question about doing it in the microwave, put the sugar in a 2-quart batter bowl and cook on HIGH for 5-6 minutes. Watch it the first time or two until you know how long is required in YOUR oven. No need to touch, stir, spray water, brush sides, etc. When it starts to turn brown, pull it out and add the cream. It will seize up and get hard but softens and dissolves as you heat the milk. Just put it back in the microwave and pull it out every minute or so to stir. I cannot make candy on top of the stove. Guess I’m spoiled with the microwave.
I made mine the old fashioned way too… my arm’s in a sling, but I’m enjoying the ice cream!
Your scoop is stunning on the serving utensil (I’m having a brain concussion and can’t think of the name)… I loved this – and broke down and used some $$ from a Williams Sonoma gift card and got a Cuisinart maker. Electric, true – but only for 25 min. The pop tart is a fantastic “pair”!
