Tuesday with Dorie: Swedish Visiting Cake

When I first looked at this recipe, I thought Dorie had made a mistake!

No leavening was included. No baking powder. No soda. No egg whites.

But I made it as written. Turned out to be rather dense, moist and quite tasty. Loved the almond flavor.

AND THEN IT HIT ME!

This recipe is exactly the same as my Emergency Microwave Brownies–without the chocolate. Instead of 1 cup of flour called for in the Swedish Visiting Cake, my brownies call for 3/4 cup of flour. The difference is made up with 1/2 cup cocoa powder.

No wonder I liked this cake. Note to Mike: Too bad I can’t bake it in the microwave like the brownies. The crust wouldn’t be right–nor would the color. But since it’s so simple, I might make it again anyway.

I thought the technique was interesting and different. How cool that you can bake brownies this way also! Love the quick recipes, especially when they’re as yummy as this one. Your cake is beautiful.

So, it’s now your emergency almond cake? I think it’s perfect any time. Love the skillet photos! I only made a half recipe, so used a boring cake pan. :)

Wonderful pictures! I am sure the taste was just as wonderful.
I used a tiny little bit of baking powder, because the apple-variant did call for some – and ended up with a hill-like cake. I don’t think that’s what the cake was supposed to look like. o:]

Well now that I have this one memorized…. it truly IS like an emergency cake. How funny about the brownies…. but now I really must dig out that microwave manual and see what exactly I can bake in it. Perhaps an angelfood cake… love the skillet cake! The photography is wonderful and the cake is beautiful! I’ve yet to try that method – is it laziness that I used a simple cake pan???

I was also kinda nervous that there was no baking soda/baking powder too but Dorie comes out with another winner. I’ll never doubt her again! Crazy about your brownies.

Your cake looks so pretty – especially on your serving dish! =) The Beau saw your post and thought the cake looked great too, but then he saw the photo of the brownie and asked me to bake that! =)

I was totally thrown off by the absence of a leavener too! I really thought it was a typo. But the cake is perfect. So cool that it is essentially your brownie recipe. Yours looks wonderful!

Love this cake, yours looks great. Hey, you mentioned no egg whites??? It says in the recipe 2 large eggs. Or did you just mean they are whipped? That’s probably what you meant, for volume. Ok.
Now, back to those brownies…..
