I keep wheat germ at my house to make skinny granola–or “cookies in a jar” as I call it. Because it goes rancid quickly, I’ve been looking for more recipes requiring wheat germ. These cookies may be the answer.
The honey and lemon flavored dough is formed into balls and rolled in wheat germ. The interior is soft and chewy with a coarse exterior reminiscent of ground oatmeal.
Since I’m obsessed with frosted cookies, I mixed up some lemon filling and turned these into sandwich cookies. Adding powdered sugar to my microwave lemon curd made a delicious icing of rather firm consistency. I frosted the flat side of one cookie and made a sandwich with the flat side of another cookie.

Brilliant…. sandwich cookies in a jar. These look wonderful – and lemon filling is a perfect choice! Now, guess I should put my jar of germ in to the fridge!
Brilliant! Love the filling, they look great! I liked these pretty well, didn’t love them, but definitely liked them
These look so good! I’m going to have to try your microwave lemon curd.
You’re a genius! I had it in the back of my mind to spruce up these cookies but I never put it into action. Bravo! These look beautiful.
What beautiful photos. You really know how to elevate a humble cookie into something memorable.
Love the lemon filling. As usual we were split on these, while no totally disliked them, no one claimed them as a fav either.

Oh, you’re a genius. These cookies would be perfect with a filling, since they’re on the simple side. Good idea!
Were you in TWD when we made the Granola Grabbers? They had wheat germ and they were very tasty.

Shame on you. I was happy with myself for only making half a batch of these b/c I was finding that I was making far too many cups of tea as an excuse to have one of these cookies. NOW I see what you did and I want one of those really really badly! OMW you know how to take things over the top.
