T here are two kinds of cookie-eaters in the world. One likes to eat a whole cookie in one–maybe two bites. (My husband) The other takes small bites, savoring every morsel. I like to nibble (a la Angela of The Office) like a little mouse and make it last as lo-o-o-o-n-g as possible.
Cafe Volcano cookies are for the first kind. One bite and the meringue cookie filled with nuts disintegrates in to a million little crumbs and pieces. Delicious, crackly, melt-in-your-mouth pieces. But they are all over everywhere if you aren’t careful. My cookies, pictured here, were a little too big for one bite, hence, the mess.
We loved these dipped in chocolate. My husband suggested I just go ahead and dip the whole cookie in chocolate next time. I’ll take it under consideration.
If you aren’t into squirrel food, Cafe Volcano cookies won’t be your favorites.
They are for nut lovers. I substituted pecans for walnuts and toasted them in the microwave to save time.

Love their chocolate bath! I should have done that because we just thought these were okay, and way too crumbly. Chocolate helps with everything, right!
P.S. I always “cheat” and toast my nuts in the microwave, too!
We loved these cookies as well…the guys inhaled them as a matter of fact and want more! I think they would like these dipped in chocolate, too. Need to make some more and dip them for them…wouldn’t they look nice on the cookie tray Christmas as well? Thanks for the idea…yours look lovely.

Those look so good dipped in chocolate. I made my second batch with pecans (and hazelnuts) and they were great!
